Equipment

  • 1 Induction Cooktop
  • 1 Tawa

Ingredients

  • 1 ½ cup Whole Wheat Flour or Atta
  • ½ cup Maida or All-purpose Flour
  • cup Sugar or jaggery; as needed
  • Salt to taste
  • Water
  • 2 tsp Ghee
  • Vegetable oil or Ghee

Instructions

  • First, take a large mixing bowl and add the all-purpose flour and whole wheat flour.
  • To this, add salt to taste and mix all the dry ingredients.
  • After this, add 2 tsp of Ghee and mix it with the flour with the fingers.
  • Next, add splashes of water and start kneading the dough.
  • Continue to knead the flour until a smooth and soft ball of dough is formed.
  • Cover the dough with a damp cloth and let it rest for about 30 minutes.
  • After the resting time, divide the dough into medium-sized balls.
  • Take one ball of dough and place it on a flour dusted rolling board.
  • Flatten it with the rolling pin and make a disk of about 3.5 inches in diameter.
  • On the top surface, sprinkle sugar (about 2 ½ tbsp or as needed) or jaggery powder.
  • Spread them evenly and then join the ends by bringing them together.
  • Close it properly and make it into a ball.
  • Again, place it on the dusted rolling board and roll it into a paratha.
  • Do this with all the dough balls.
  • Now, take a tawa and let it heat. Keep the flame on medium.
  • After the tawa is heated properly, place a rolled paratha. Flip and cook it half from both sides.
  • After it is half cooked, drizzle ghee or vegetable oil on the sides of the tawa and then fry them.
  • Flip and fry them from both sides until cooked through.
  • Do this a couple of times until it is crisp and the small brown spots appear.
  • When done, transfer them onto a plate.
  • Do the same with the rest of the parathas.
