Every kitchen in India has Masoor dal and this lentil is packed with nutrients. With this, simple and less time-consuming snacks can be made like the dal’er bora. The bora generally consists of basic ingredients like chilis, garlic, etc. The flavor profile is amazing. It is savory, a bit spicy, and has a kick of garlic to it. The crunchiness uplifts the texture.

Masoor Daler Bora Recipe (Bengali-Style Lentil Fitters)
Equipment
- 1 Induction Cooktop
- 1 Kadhai
Ingredients
- 1 cup Masoor Dal
- 5-6 Cloves Garlic
- 2 Onion medium
- 4-5 Green Chili or according to heat tolerance
- 3 tbsp Coriander leaves chopped
- Salt to taste
- 1 ½ tsp Sugar optional
- 2 pinch Baking Powder
- 1 tsp Turmeric powder optional
- Vegetable Oil
Instructions
Prepare the dal
- First, wash the masoor dal thoroughly under running water.
- Next, soak it overnight.
Grind the Dal
- After this, drain out the excess water and then grind it using a mortar and pestle or sil batta. Do not make the entire dal into a fine paste, keep a bit of it on the course side.
- Transfer it to a mixing bowl and keep it aside.
Add the veggies
- Now, chop the onions and the green chilis. Also, chop the garlic cloves into small pieces.
- Add the chopped garlic, onions, and green chilis into the mixing bowl.
- To this, add salt to taste, sugar, baking powder, and turmeric powder (optional).
- Combine all the ingredients nicely.
- Add the chopped coriander leaves into the mix and fold everything again. Do this for about 1-2 minutes.
- Take a taste test. Add salt if needed.
Fry the Daler Bora
- Now, take a deep-frying pan and add a sufficient amount of oil.
- Keep the flame on medium and let the oil heat.
- When the oil is hot enough, make small dollops of the dal mix and gently place it into the oil.
- Fry them from both the sides until golden brown. Keep the flame on medium.
- Do this in batches. Do not overcrowd the pan.
- When done, transfer them onto a kitchen tissue-covered plate. This will soak off the excess oil.
Garnish
- Garnish the Masoor Dal’er boras or dal fritters with a sprinkle of Chaat masala.
